How do they measure radiation dose nowadays?

I vaguely remember from high school chemistry they used to measure radiation with an arbitrary unit called roentgen. I hear something else now on the news. What is the current unit used to measure radiation dose in humans? I know some radiation is inescapable, but at what level should I be concerned?How do they measure radiation dose nowadays?
Rads, Roentgens, Sieverts, curies.

Sieverts is for dose I think.
A few sieverts (like 2) are not fatal, but 5 or so can kill.

Oh yeah, and Counts per minute, and grays
